The wort is cooled and transferred to large fermentation tanks, where yeast is added to let the fermentation process begin. Lagavulin’s fermentation cycle is one of the longest, lasting 55 hours, which breaks down the sugars in the wort into alcohol. With such an extensive fermentation period, lighter fruitier notes come to the fore within the wash. John Johnston founded the Lagavulin distillery in 1816, though there had been as many as ten illicit distilleries in the area since 1742. Lagavulin was home to legal distilling under Johnston’s eye, however. Shortly after it opened, a distillery named Ardmore was opened close by, though this became part of Lagavulin a few decades later. The 16 is a symphony where each note, while assertive, never overpowers the other. It’s this intricate balance that has earned Lagavulin 16 its place as an Islay classic. I personally find it best enjoyed neat or with a drop of water to open up its complex profile. Fruit tarts featuring apples or pears are an excellent pairing for Macallan 12 Double Cask. The whisky’s light sweetness enhances the natural sweetness of the fruit, while its oloroso sherry notes provide a unique depth of flavour that works to delicately balance out the sweetness. Additionally, the whisky’s intense roasted nut and malt flavours work to bring out the best in both the whisky and the tart, creating a truly indulgent tasting experience. For the Lagavulin 16, you can venture into richer territory. Its robust character stands up to heartier foods. Smoked meats and aged cheeses are a delight when paired with this whisky. And if you’re in for a dessert, dark chocolate matches the rich, smoky sweetness of the Lagavulin 16 perfectly. The whisky is then transferred to a mixture of former Bourbon and Sherry casks, where controlling the temperature and distillation time yields the precise flavour Caol Ila is after. These barrels have been re-charred and re-toasted which imparts a rich and complex flavour profile with notes of smoke, honey, dried fruit, and a hint of sea salt.
